Try This All Natural Grilled Asparagus and Shitake Tacos For A Healthy Dinner

Tacos are one of the most delicious Mexican dishes. It is one such dish which makes your meal complete. It is not only tasty but also delicious. The grilled asparagus and shiitake mushroom taco is an entirely new recipe for the taco lovers. Even the smell of it will make your mouth water.

Here are some of the best ways to prepare your grilled asparagus and shiitake tacos.

METHOD 1:

This is one of the most delicious Mexican recipes with a veggie twist. It is very easy to make and takes only about an hour to prepare the entire dish.

What are the ingredients you are going to require?

  • Two tablespoons of canola oil
  • Four cloves of garlic which has been crushed
  • One tablespoon of chipotle chile
  • A bundle of green onions properly chopped
  • One tablespoon of Kosher salt
  • Eight ounces of shiitake mushrooms
  • Eight corn tortillas
  • One cup of guacamole
  • Lime
  • Cilantro
  • Hot sauce for garnishing purpose

How will you prepare your dish?

You will have to heat a grill on medium flame and add a large baking dish on it. Now, you will have to put the oil, garlic, salt and chipotle chile in it.  Add the asparagus, shiitake mushroom and chopped green onions.

Continue to toss the mixture for 5 minutes. After that, you will have to grill asparagus until they become soft and slightly burnt. Toss the asparagus occasionally so that the entire grilling process is smooth.

Do this for around 5 to 10 minutes. Then you have to grill the shiitake mushrooms and green onions till they turn tender. You will have to turn them occasionally as well for 4 to 5 minutes. Now put the vegetable cuttings on a cutting board. Cut the asparagus as well as green onions into small slices and serve your dish with corn tortillas, cilantro, and guacamole. You can top it up with hot sauce as per your only choice.

 

METHOD 2:

Here is yet another way to prepare your shiitake and grilled asparagus tacos. It is also very delicious and has an entirely different flavour to it.

What are the ingredients which you are going to require?

  • Four white tortilla wraps
  • 300 grams of asparagus
  • 200 grams of mushrooms
  • 100 grams of shiitake mushrooms
  • Two red onions
  • Four cloves of garlic
  • One avocado
  • Two small tomatoes
  •  One green chilli
  • A handful of coriander to garnish
  • A spoon of chilli sauce
  • Two tablespoons of olive oil
  • Salt to taste
  • Freshly ground pepper

You will take around 20 minutes to prepare and another 20 minutes to cook your dish.

How are you going to prepare your recipe?

First of all, you will have to take out the wire rack from your oven and preheat to around 200 degrees Celsius. You will have to cover the baking tray with the foil and cut the ends of the asparagus. Now cut the remaining vegetables. Cut the asparagus into two halves. Cut the mushrooms into thick slices. Cut the shiitake mushrooms in two halves. You will have to peel the onions and place all your vegetables on the tray.

Now, you will have to grate the garlic cloves. Mix it with two tablespoons of olive oil. Place the garlic oil over your vegetable and mix them properly with your hand. Place the tray inside the grill for 10 minutes until the vegetables turn soft and crispy. You must check on it every now and then to make sure that it is consistent and not getting totally charred. Once the vegetables are cooked, you will have to turn the grill off and place your tray on a lower shelf of your oven to keep them warm. Do not remove the tray completely from the oven.

Now, in order to prepare your avocado salsa, you will have to finely chop the onions and place them in a bowl. Add lemon juice to it and some salt as well. Mix them together to get a consistent mixture. After that, you will have to cut the avocado into two halves and take out the flesh from it. Throw away the stone and roughly chop the soft part and added to the bowl. Toss some more onions and lemon juice to it to prevent it from going brown. Add the find the chopped onions to it. Add a little chilli to give it a good taste. Take out the seeds from the chillies before adding them. Now, you will have to add some coriander with the vegetables and mix everything together so that it becomes uniform.

Separate the tacos in two plates and fill each of them with vegetables. Add your avocado Salsa to it and apply green chilli sauce. Add the remaining coriander cuttings and serve your dish.

METHOD 3:

This is a very simple way to prepare your grilled asparagus and shiitake tacos. It only takes a few minutes to prepare but is extremely delicious as well as healthy.

These are the following ingredients which you are going to require:

  • Two tablespoons of olive oil
  • Two cloves of garlic
  • 500 grams of asparagus
  • 300 grams of Mushrooms
  • 5 corn tortillas.
  • Sriracha sauce
  • Salt and pepper to taste
  • Chopped coriander

How will you prepare your dish?

You will have to heat up your oven at the medium frame. Add a cup of olive oil to a bowl. Add the minced garlic and salt and pepper. Add the asparagus and shiitake mushrooms to the mixture. Grill the vegetables for around 10 minutes until they become slightly charred. Remove the vegetables from the grill and place them aside so that they can cool down. Add a little more of asparagus and sliced mushroom to it. Boil the corn tortillas and add the same with the vegetables. Add a tablespoon of salt and drizzle some chopped coriander before serving your dish.
